Step 1
Wash the courgettes, chop off the tops and then scoop out the flesh with a spoon.

Keep the flesh.
Step 3
In the meantime, halve the peppers, remove the seeds, then chop them into small cubes.
Step 4
Wash, peel and finely chop the onion.
Step 5
Chop the courgette flesh into pieces the same size as the other vegetables.
Step 6
Preheat your oven to 220°.
Step 7
Lay the courgette skins in a gratin dish, season with table salt and ground pepper, drizzle a little bit of olive oil over the top and cook for around 10 minutes.
Step 8
Pour the rest of the olive oil into a piping hot frying pan and brown all the cubed vegetables. Season and keep hot.
Step 9
Take the courgettes out of the oven and fill with the vegetable mixture.
Step 10
Sprinkle generously with the Président Grated Emmental and return to the oven under the grill for a few minutes until the gratin turns a lovely golden brown.
Step 11
Remove from the oven and serve piping hot.
