Ingredients

  • 125g flour
  • 2g table salt
  • 50g Président unsalted butter
  • 25cl milk
  • 2 eggs
  • 70g sugar
  • A few drops vanilla extract

Preparation

Step 1

Melt the butter, then whisk it vigorously in a bowl with the eggs, salt and sugar.

Step 2

Sieve the flour into the bowl, stirring all the time, and finish off by adding the milk, which should be at room temperature.

Step 3

Mix thoroughly to a smooth, consistent batter. Flavour with the vanilla extract.

Step 4

Leave to rest for at least an hour.

Step 5

Just before you are ready to serve, pour a small ladleful of the mixture into a lightly oiled non-stick pan over a low heat. When one side is brown, use a fish slice to turn it over, or if you’re feeling brave, toss it in the pan! Eat while still hot and add whatever you fancy (sugar, jam, cream or of course, Président butter).
