Président Crispy Bakes with Mushroom

- For the Mushrooms
- 12 Chestnut Mushrooms, stems removed
- 3 President Crispy Bakes, halved
- Herb butter
- To Serve
- Baguette, sliced, charred or toasted (optional)
- Leafy Green Salad (optional)
- For the herb butter
- 60g Président unsalted butter
- 1 Large Garlic Clove, crushed
- 1 tbsp each Sage, Rosemary, Thyme, Parsley, finely chopped
- ½ lemon, zest

Step 1
Preheat the grill to high.
Step 2
Make the herb butter
Melt the butter in a small pan. When beginning to foam, add the garlic, herbs and lemon, and continue to cook for a few seconds.
Step 3
Prepare the Mushrooms
Place the mushrooms, cup side down on a baking tray. Brush the herb butter over the mushrooms, reserving some to serve. Place under the hot grill for 6-8 minutes until almost cooked through. Carefully turn the mushrooms over, and place half a Président Cheese Crispy Bite in the centre of each mushroom, cut side facing up. Return to the oven for a further 2-3 minutes, until bubbling and golden.
Step 4
Serve drizzled with a little more herb butter alongside some charred bread, a leafy green salad, and some lemon if desired.
