Ingredients

  • 3 eggs
  • 250g flour
  • 180g sugar
  • 130g Président unsalted butter
  • 1 vanilla pod
  • 1 sachet baking powder
  • 130g candied fruit
  • 5cl rum

Preparation

Step 1

Preheat your oven to 200°. Mix the sugar, flour and baking powder in a bowl.

Step 2

Use a knife to cut the vanilla pod lengthways, then scrape out all the seeds. Melt the butter, then add to the mixture and stir.

Step 3

Add the eggs, one at a time. Whisk vigorously until the mixture is smooth. Keep mixing as you add the rum and candied fruit.

Step 4

Cook in the oven for 45 minutes, checking on it occasionally. Cover with a sheet of aluminium foil if the cake looks too dark.

Step 5

Check to see if the cake is cooked by inserting a knife into the middle: if it comes out clean, it’s ready. Remove from the tin once it has completely cooked.
