Ingredients

  • 200g Président Grated Emmental
  • 200g Président Slightly Salted Butter
  • 160g coquillettes (small macaroni or pasta shells)
  • 800ml fresh chicken or duck stock
  • Sea salt and pepper

Preparation

Step 1

Boil the stock in a large saucepan and add the uncooked pasta.

Step 2

Reduce to a simmer and cook the pasta until it is tender and almost all the stock has been absorbed.

Step 3

Add the diced Président Slightly Salted Butter.

Step 4

Mix in 160g Emmental and stir until melted. Check the taste of the dish – add salt if needed.

Step 5

Tip the mixture into a gratin dish and sprinkle over the rest of the Président Grated Emmental.

Step 6

Place under the grill until the top is brown and bubbling. Take the dish from the oven and allow to cool for a minute or two.
