Step 1
Lay the sheets of brik pastry on your work surface.
Step 2
Cut out 36 circles with a biscuit cutter.
Step 3
Brush each of the circles with olive oil.
Step 4
Preheat your oven to 180°.
Step 5
Line a baking tray with baking parchment, then arrange 12 piles of three circles of pastry on the parchment.
Step 6
Sprinkle them all with the Président Grated Emmental.
Step 7
Put in the oven for around 3 to 4 minutes until golden brown.
Step 8
In the meantime, halve the peppers, remove the seeds and chop into small cubes.
Step 9
Do the same with the tomatoes. Wash, peel and chop the red onion.
Step 10
Add the rest of the olive oil to a pan, heat up and cook all the cubed vegetables, starting with the onions, then the peppers, and finally the tomatoes.

Season with table salt, ground pepper and Espelette pepper.

Once the mixture has reduced, remove from the pan and keep warm.

When you are ready to serve, arrange one little pile of three browned pastry circles in the middle of a plate.

Garnish with a generous spoonful of vegetables and a few strips of smoked salmon.

Repeat until you have three layers of pastry.

Serve warm and crispy.
