1. Rinse the quinoa under cold water.
2. Bring 1L of water to the boil and add the quinoa. Cook for 10 minutes (as you would cook rice).
3. Strain it, keeping approximately 30ml of cooking water in the pan.
4. Put the pot with the quinoa and cooking water back on the heat. Add the Président® Grated Emmental, diced Président® Slightly Salted Butter and truffle oil. Season and stir until all the ingredients are well mixed together.
5. Leave the quisotto on the heat for 2-3 minutes for the water to evaporate.
6. Plate it and add some pre-chopped chives and baby cress on top.
