Red Mullet with Président butter

Ingredients

  • 50g Président butter with Sea Salt Crystals
  • 8 red mullet fillets
  • 1 carrot
  • 1 courgette
  • 1 parsnip
  • 60g peeled, cooked broad beans
  • 1 lemon
  • 1 bunch rosemary
  • Table salt
  • Ground pepper

Preparation

Step 1

Preheat your grill.

Step 2

Peel the carrot and parsnip and chop, then boil them until they are al dente. Cut the courgette into cubes.

Step 3

Brown all the vegetables in a hot pan with a generous knob of butter. Season with table salt and ground pepper.

Step 4

Grill the red mullet fillets.

Step 5

Prepare the plates: arrange the piping hot fish, add the vegetables, garnish with lemon slices and rosemary. Just before you serve them, put a knob of President Butter with Sea Salt Crystals on top of the red mullet so that it has just melted when it’s time to eat.
