Salmon and Spinach Tian

Ingredients

  • 200g fresh salmon without the skin
  • 1 shallot
  • 500g fresh spinach leaves
  • 8 basil leaves
  • 125g Président Grated Emmental
  • 2 tablespoons pine nuts
  • Pink peppercorns
  • Olive oil
  • Pepper

Preparation

Step 1

Preheat the oven to 200° (gas mark 6-7). Wipe the salmon and cut into thick slices. Peel and chop the shallot. Rinse the spinach leaves.

Step 2

Heat the oil in a pan. Brown the shallot for 2-3 minutes, stirring the whole time.

Step 3

Add the spinach and basil leaves and wilt them for 4-5 minutes.

Step 4

Oil an oven-proof dish, then alternate the salmon slices and the spinach leaves in the dish. Season with salt and pepper and add a few pink peppercorns and the pine nuts. Sprinkle with Président Grated Emmental and cook for 15 minutes. Serve piping hot.
