Société Roquefort Pissaladière

1. Slice the shallots finely and put them in a pan; add some rosemary and cover with water, cook gently for 5 minutes and then remove from the water.

2. While the shallots are cooking, cut a piece of puff pastry into a 12cm diameter circle. Place the pastry between two baking trays and pop into a preheated oven at 180°C and bake for 5 minutes.

3. Remove the top tray and bake for a further 4 minutes until golden.

4. Take the pastry out of the oven and place on a board; add green olives, shallots, Société® Roquefort and anchovies on top.

5. Garnish with rosemary and cut into 8 pieces and serve.
