Ingredients

  • 1.5kg Bookshop, Golden Delicious or Canada apples
  • 250g sugar
  • 120g Président unsalted butter
  • 60g Président slightly-salted butter
  • 1 pinch cinnamon
  • 1 sheet pure butter puff pastry

Preparation

Step 1

Peel, core and quarter the apples.

Step 2

Melt the two butters in a deep pie dish, sprinkle with sugar and caramelise slightly. Arrange the apple quarters and cook on a low heat for 8 to 10 minutes.

Step 3

Cut the pastry to fit the tin, then lay the caramelised apple slices on the pastry.

Step 4

Preheat your oven to 200°. Cook for 30 to 35 minutes.

Step 5

Remove from the oven and leave to cool slightly before removing from the dish. Serve warm, with a generous dollop of crème fraîche.
